Since 1973, Kanedai has been catching Deep Sea Red Crab in Africa.
Currently, we are engaged in crab fishing in the Namibian waters, Africa.
Deep Sea Red Crab (Chaceon maritae) is found in various place around the world, but Kanedai’s Deep Sea Red Crab is caught off the coast of Namibia.
The Republic of Namibia is located in the southwest Africa, and features the world's oldest desert, the Namib Desert, which has been designated as a UNESCO World Heritage site. Namibia also has rich fisheries resources. Deep Sea Red Crab grows up in the clean, cold water of the deep sea.
In the 1970s, we were the first Japanese company to start crab fishing in the Namibian waters, southwest Africa. At the time of Namibia's independence, we got involved in establishing the local company OSHIMADA FISHING (Pty) LTD. Since then, we have led the company's fishing and operations based on a partnership with OSHIMADA FISHING (Pty) LTD., and have been handling the crab products in an exclusive and stable manner.
After being caught, the crabs are boiled and frozen (quickly frozen) on board within one hour under thorough quality control based on the HACCP hygiene standard.
The raw materials that have been boiled and frozen (quick-frozen) on board at sea are processed at our factories in China, Vietnam and Japan in accordance with HACCP, an international hygiene management standard.
We have developed our own technology for shelling frozen crabs. This technology allows us to perform the entire process, from raw material to finished product, without thawing the crab meat even once. By strictly controlling the temperature, we preserve the fresh-from-the-sea deliciousness.
We supply products processed with our own technology not only to the Japanese market, but also to markets around the world.
Immediately after being caught, the shell of the crab is bright red in color, but after being boiled and frozen, it changes to a cream or dark brown color. Due to its shell color, Deep Sea Red Crab has not garnered great popularity in Japan. However, its meat is a beautiful pink color.
The secret of its deliciousness is its high content of amino acids compared to the other crabs. The sweetness and umami derived from this composition represents the Deep Sea Red Crab’s greatest appeal.
